Rubén's culinary vision fuses tradition and innovation, transforming each dish into a sensory journey that evokes roots, emotions, and memories.
Born in Daimiel, Rubén comes from a family with a long tradition in the hospitality industry and is the third generation to be dedicated to gastronomy. He grew up in the kitchens of the family restaurant, El Bodegón, in Daimiel, where he developed his passion for cooking alongside his mother, María.
He honed his skills in some of Spain's most renowned kitchens, notably at Las Rejas with Manolo de la Osa, where he found his culinary identity. He then returned to El Bodegón, establishing it as a culinary benchmark in Castilla-La Mancha and earning two Repsol Suns, while also coming close to receiving a Michelin star.
Since 2019, he has led Restaurante Epílogo in Tomelloso, an innovative gastronomic space offering an interpretation of La Mancha cuisine based on seasonal produce and quality ingredients. His achievements include a Repsol Sun and a Michelin star.
