Jesús Segura

Jesús Segura is one of the ambassadors of the Raíz Culinaria project, which was launched by the Regional Government of Castile-La Mancha to promote contemporary regional cuisine on a larger scale.

Jesús Segura entered the world of cooking out of necessity, just as he happened to be born in Barcelona. The son of Cuenca natives, he returned to the enchanting city at the age of nine and settled there. During his training, he worked in 36 restaurants, beginning in 1999 at the Casas Colgadas restaurant in Cuenca. The chefs who influenced him the most were Ricard Camarena and Manolo de la Osa, the latter of whom he worked with at Ars Natura in Cuenca when it was awarded a Michelin star.

A turning point in his career came in 2012 when he was recognised as Revelation Chef at Madrid Fusión, which encouraged him to stop working for others and start his own venture. That project was Trivio, which opened in 2015. The Michelin star came three years later.

In 2022, Trivio made way for two new ventures: La Casa de la Sirena and Casas Colgadas. These occupy part of the premises formerly occupied by Mesón Casas Colgadas, one of Cuenca's historic restaurants. At Casas Colgadas, Segura showcases his most gastronomic side, a talent that was recognised by Michelin in 2025 with a star. The second restaurant, Casa de la Sirena, offers more casual, traditional cuisine.
