Javier has been the head chef at Las Musas restaurant since 2008.
Born in Madrid, he began his career at the age of 16 at the restaurant Un alto en el Camino, working alongside the renowned chef Manuel Seller. He remained there for 11 years. During this time, he trained and studied, devoting himself to his profession.
He currently manages and coordinates the kitchen at Las Musas restaurant in Campo de Criptana. This restaurant offers a menu based on La Mancha cuisine, with a strong focus on respecting the ingredients used.
