José Antonio Medina comes from a family of hoteliers. His parents' restaurant has been open since 1982, for 43 years, in Puebla del Príncipe (Ciudad Real), the town where he grew up.

He trained as a chef at home until the early 2000s, when he decided to start a new business venture with his family, taking the lead himself.

At that point, José Medina felt the need to experience other cuisines and learn from the best. After taking his first professional steps at El Carmen de Montesión (run by Iván Cerdeño), Damajuana, Santerra, El Palio and Granero, he opened El Coto de Quevedo in 2010, acting as both chef and manager of the restaurant. This establishment pays homage to the cuisine of inland Spain.
