Chef at Palio Restaurante (Ocaña, Toledo, Spain)

He is a chef by vocation, as well as a pastry chef and baker, following in the family tradition.
As the son, grandson and great-grandson of bakers, he has always held the world of pastry and baking in high regard. He received specialist training in cooking, working alongside Pepe Rodríguez at El Bohío and Santi Santamaría at El Racó de Can Fabes. His first position of responsibility was as head chef at the Malvasia restaurant in the Hotel Husa Princesa in Madrid. He then returned to the family business, setting up the Palio Restaurant with his brother Isaac.
An entrepreneur, he runs Palio Restaurant (Ocaña), where he practises what he calls 'artisan cuisine', free from artifice and untouched by trends.
He is also a baking teacher at the Madrid Chamber of Commerce and a cooking teacher at Alambique, as well as a contributor to the TVE programme “Aquí la Tierra”.
