Hailing from the small village of Ventas con Peña Aguilera, sommelier-fromelier Álvaro Parrilla and head chef Sebastián Barbosa present a gastronomic offering centred on local produce from the Montes de Toledo region. Small and large game meats are their source of inspiration and the true stars of their cuisine, alongside other wild and seasonal produce.Álvaro Parrilla is not only a sommelier and fromelier, but also the business manager.

He received first prize in the National Competition for the Best Cheese Board in Hospitality at the Fromago 2024 Cheese Experience.
