He is a craftsman who seeks and promotes quality, ethics and respect for animals, who knows how to turn craftsmanship into art and thought into philosophy, with the same spirit that made Tuscany great during the Renaissance.

Dario Cecchini represents the eighth generation of a family of butchers from the Chianti region. Although he was the first male in his family to go to university, his dream of becoming a veterinarian was cut short by the death of his father. He had to abandon his studies and return to Panzano (Chianti) to take over the family business.

His world in Panzano is divided into several parts: the butcher's shop, a food truck and two restaurants whose menus, taken together, respect all the parts of the animal, offering everything from Musetto al Limone (the snout and hooves) to Tenerumi in Insalata, a warm salad of boiled veal knees, and the famous Bistecca alla Fiorentina. Word of mouth has made the Antica Macelleria Cecchini a place of pilgrimage.

Netflix dedicated an episode of its famous Chefs Table series to the butcher, and today Cecchini sells his meat in person and online, and has several steakhouses, food trucks and gastronomic spaces in Italy and abroad.
