 How to create an à la carte gastronomic destination: The case of 'Alto Asón'. Tasting presentation: 'Echoes of the Asón'

Alto Asón, one of the least known and most authentic regions of Cantabria, has taken the first step towards becoming a leading tourist and gastronomic destination by creating a brand to promote itself. Promoted by the Alto Asón Association of Municipalities, the initiative seeks to raise the profile of a region with landscapes, culture and gastronomy that are unique in Spain. The region boasts the largest concentration of rock art in Europe per square kilometre and a 70-metre-high waterfall. It will also soon be home to a 400-metre zip line at the source of the River Asón. Additionally, the region's agricultural and livestock tradition ensures the authenticity of its produce. To showcase the destination's gastronomic potential, two of the region's leading figures, Nacho Solana (Restaurante Solana, 1 Michelin star) and David Pérez (Restaurante Ronquillo, 1 Sol Repsol), will present a tasting event.
