Gastronomic Villages: Small Towns, Great Destinations

This round-table discussion will bring together two towns with a similar population of just over 6,000 and two Michelin-starred restaurants each. It will demonstrate how gastronomy can stimulate development in small towns. Drawing on the experiences of Sigüenza and Ulldecona, the session will analyse the roles of chefs, restaurants, producers, and local stakeholders in establishing a distinctive gastronomic identity. It will also explore how towns can find new opportunities, attract visitors and enhance their heritage through cuisine and local talent.
