Gastronomy has the power to invigorate and revitalise regions by connecting the past, present and future. Hubert Gonera will consider how local food, traditional practices and community involvement can stimulate economic, cultural and social regeneration processes. He will also consider flavour as a tool for reclaiming spaces, showcasing local resources, and restoring the central role of the people who keep the essence of each place alive.
